Jos Louis Marshmallow cupcakes

Jos Louis is a very popular snack in the eastern part of Canada like Ontario and Quebec, but mostly Quebec from what I understood. When I first moved to Quebec, it was kind of expected from me to have Jos Louis and Pepsi for breakfast. No matter how much of a French stereotype that is, I totally loved it! And who wouldn’t? It’s even better with these Jos Louis cupcakes with marshmallow-y goodness in the centre! Yum!!


This recipe is for a very rich dark chocolate cake which is so flavourful, you wouldn’t ever want to eat any another chocolate cake after this one. The original recipe was posted on Rock Recipes for a 2 layered 9-inch cake. I made some changes to the ingredients to fit my taste and purpose. I do not have too many step by step images for this recipe, so I’ll quickly go over the ones I do have and then go on to the recipe :)

I took these cupcakes into work. The president of the company happened to come by our branch that afternoon and in his words, “these were the best cupcakes I’ve ever had”. Everyone simply loved these cupcakes and they were all gone within the first few hours into the day lol. So you bake these cupcakes using the recipe below, and using your Wilton tip #230, fill these cupcakes with the marshmallow filling. Here’s what it looks like in case you’re wondering.

You can choose to make your own marshmallow filling or you can use marshmallow fluff if you’re strapped for time.

You cupcakes will look like this once filled.


Then, you top it off with your vanilla buttercream icing. You can decorate it in any way you like. I did swirls on the cupcakes and left it at that.

5wIf you want to get the real Jos Louis feel to your cupcakes, dunk your cupcakes with icing into melted chocolate to form sort of a hat. Please let me know in the comments section below if you want to see the technique to doing that. You can also drizzle melted chocolate or top them off with shavings of chocolate :D However you decide to do it; it will turn out just as delicious! :D This is what it looked like on the inside.
