1 Canada Day Cupcakes2 Vanilla Cupcake with Mint Chocolate Chip FrostingIt’s the Canada Day long weekend here in Canada. With all the BBQs firing up everywhere and grilling of food, you cannot ignore this little sweet treat you can make that also goes so well with the occasion. I could have made the maple frosting to make it even more Canadian, but I decided to try my new purchase (Mint Choclate Chip LorAnn Oil) which I’ve been dying to try for so long lol. So, I made a Mint Chocolate Chip frosting to go with these gorgeous cupcakes.

On request, I decided to make vanilla cupcakes because they fit the theme AND I wanted to challenge my chocoholic self lol. I do make vanilla cakes every now and then, but as you must have noticed, it’s mostly chocolate.  The recipe here is slight modification from the Whimsical Bakehouse Vanilla cupcake recipe I found on Hands on Kitchen. I’ve heard such great reviews about this cookbook that I really really wanted one! I wanted to try a recipe from the book first before I went on and bought it. This was the one recipe I tried and it is too good! I loved the cupcakes and I loved how simple the recipe was :D I’m definitely buying the book now because I’m sure there are tonnes of other awesome recipes in there!

For a dozen vanilla cupcakes, you will need 1 ¾ cups plus 2 tablespoons of cake flour and a cup of sugar in a mixing bowl.

4Gently mix the two using a whisk attachment at stir speed. Add in ½ cup + 2 ½ teaspoon hot milk (mine was boiling in the microwave).

5Mix well. Add in 2 eggs, ½ cup salted butter at room temperature and 1 teaspoon vanilla extract. Continue to whisk this mixture for about a minute, and then add 1 ½ teaspoon baking powder. Scrape down the sides of your bowl using a spatula and continue to mix the batter for another minute and half. Your vanilla cupcake batter is ready! Now you line your cupcake pan with paper liners.

6Fill them with batter.

7And bake them at 350F for 20 minutes or until a cake tester inserted into the cupcakes comes out clean.

8Allow to cool on a wire rack.
