What’s white, chocolate-y and full of macadamia nuts!? Yes, I know! You’ve probably read the title of this post But I’ll have to give this one a grand introduction! So lo and behold! Bringing to you today is the richest of all cookies, so delicious – you cannot stop eating them and did I mention, so beautiful looking!
I’m not really a big fan of white chocolate, but this cookie is an exception. My sister absolutely loves white chocolate and I can safely say that she is the one who got me started onto these cookies. Every time we bought a combo meal from Subway, she’d add a white chocolate macadamia nut cookie to her meal, while I stuck to my usual favorite: chocolate chunk cookie. I love food, so I always just stuff it in my mouth and I can bet I simply swallow it because I never have any recollection of chewing my food lol. Just kidding! All that to say that I finish my goodies a lot faster than my sister does, and then I sit there eyeing her food lol. Some days, if I’m lucky, she will share her cookie or ice cream or anything else that she’s having. That time I did get lucky and she shared a quarter of her macadamia nut cookie and boy I’m so thankful she did! It was so delicious! I just couldn’t believe that white chocolate (not being a chocolate at all) could taste that good! I was simply blown away!
I had never attempted to make these at home until my best friend (who also happens to love white chocolate) brought them up in a conversation once. And there it was. A sign! I took it! So I dug through my cookbook (The Joy of Cooking by Irma Rombauer) and found this lovely recipe! I reduced the amount of sugar in this recipe though. It seemed like a lot! So, I finally baked some for my bestie and he loved it! :)That’s my story!
